The Basque macaron: a well-guarded treasure since 1660
The Basque macaron is one of the Basque country's tastiest emblems. In Saint-Jean-de-Luz, it has been part of history, the collective memory and everyday life for over three centuries. Generous, melt-in-the-mouth, with an intense almond flavour, it is seductive in its simplicity and authenticity.
It was in 1660, when King Louis XIV married the Infanta Maria Theresa of Austria, that the Maison Adam macaron became a legend. On that day, our grandfather had his almond macarons brought to court. Queen Anne of Austria herself praised their delicacy. Since then, our recipe has remained unchanged: Valencia almonds, egg white, sugar, and a unique know-how handed down from generation to generation.
Artisanal production and unique family know-how
At Maison Adam, the production of Basque macarons is based on an ancestral ritual that has been passed down orally since 1660. Even today, just a few members of the Adam family - led by Andoni and Miguel - carry on this tradition every morning, with absolute respect for the original recipe.
Every step counts : carefully selected almonds are finely ground, then combined with sugar and egg whites to make a dense, homogenous paste. This mixture is then separated, macaron by macaron, before a precise baking process that reveals all its aromatic richness. The result: a slightly golden shell, a tender centre and an incomparable almond flavour. Gourmet delights and heritage all in one.
How do we store our Basque macarons?
Storing macarons is essential if you are to enjoy their texture and flavour to the full. Our macarons contain no preservatives, so their freshness depends on the rigour of our daily production and careful packaging. We dispatch them every Tuesday, Wednesday and Thursday, the very morning they are made, in our elegant metal boxes, in collectable limited editions of 12, 24, 36 or 48 macarons. Our macarons are carefully protected to ensure shipment without breakage.
There are two ways to store them: - In the refrigerator, in the vegetable crisper (least cold): up to 10 days storage. Take them out 10 minutes before eating so that they reveal all their deliciousness. - At room temperature (in a cool, dry place): up to 2 days.
An important tip: avoid leaving them in the car in very hot weather. They prefer shade and coolness to sunbathing.
